  • Cooked Rice: 1 serving (warmed)

First, let’s make the perfect topping for your japchae rice bowl: a delicious fried egg! Heat a lightly oiled pan over medium heat. Crack the egg into the pan. Cook it to your desired doneness – sunny-side up, over easy, or fully cooked. Frying the edges until slightly crispy adds a delightful texture.

You can reuse the same pan used for the egg to save on washing up and add extra flavor! Add chopped green onions to the pan and stir-fry over medium-low heat until fragrant. Once the aroma of the scallions is released, add your leftover japchae. Pour in 1/2 cup (about 100ml) of water. Adding water will help the japchae become tender and moist, preventing it from being dry.

Now it’s time to add the savory flavors! Add 2/3 Tbsp (about 10ml) of soy sauce and 1/2 Tbsp (about 7.5ml) of sesame oil to the japchae. Stir-fry quickly over medium heat to ensure the seasonings are evenly distributed. Be careful not to overcook, as this can make the japchae tough.
