  • 1/2 Tbsp Minced Garlic
  • 4 Tbsp Soy Sauce
  • 1 tsp Sugar
  • 1 Tbsp Gochugaru (Korean Red Pepper Flakes)
  • 1 Tbsp Chopped Green Onion
  • 3 Tbsp Avocado Oil (or cooking oil)

First, wash the 2 potatoes thoroughly, peel them, and cut them into approximately 1.5cm cubes. Cutting them into these bite-sized pieces will make them easier to mash later.

Place the cubed potatoes in a microwave-safe bowl and cover it with plastic wrap. Poke a few small holes in the wrap with a fork or toothpick to allow steam to escape. Microwave on high for about 7 minutes, or until the potatoes are tender. (Adjust cooking time based on your microwave’s power.)

Test for doneness by inserting a fork or chopstick into a potato cube. It should pierce easily. If it’s still firm, microwave for an additional 1-2 minutes until fully cooked. Properly cooked potatoes mash smoothly.
