This ‘Kimchi Turella’ dish, made by enhancing leftover soybean sprout kimchi soup with fresh ingredients, is a perfect meal to warm you up on a cold day. Basic Ingredients- Leftover soybean sprout kimchi soup, 1 large bowl
- Noodles, 1.5 handfuls (approx. 150g)
- Kimchi, 1 handful (approx. 50g)
- Soybean sprouts, 1 handful (approx. 50g)
Cooking Instructions
Step 1
First, pour about one large bowl of the prepared soybean sprout kimchi soup into a pot. If the soup seems a bit thin, add another bowl of water to enrich the broth.
Step 2
To deepen the flavor, add a handful of well-fermented kimchi and a handful of fresh soybean sprouts to the pot. For an even better texture, chop the kimchi into bite-sized pieces.
Step 3
Once the soup in the pot comes to a rolling boil, add the noodles. It’s important to prevent the noodles from clumping together as you add them.

Just before adding the noodles to the pot, gently loosen them with your hands, or use chopsticks to carefully separate any clumps. This ensures that the noodles cook evenly and don’t stick together.

The noodles might look sparse at first, but they will expand as they cook, so don’t worry. If you prefer a heartier portion, feel free to add an additional half handful of noodles (about 75g) for an even more satisfying meal.
Step 6
Using chopsticks, quickly stir the noodles to prevent them from sticking. When the noodles become tender and the broth thickens slightly, it’s almost ready. Taste the soup and adjust the seasoning with salt if needed.
Step 7
Kimchi Turella can become more watery and the noodles softer if overcooked. It’s best to cook it just until the noodles are tender, rather than boiling it for too long. Enjoy it while it’s warm for the best flavor!
