This step is crucial for maintaining a firm and chewy noodle texture. Important: Do not discard the noodle cooking water! Save about one ladleful to use later for broth.

3. Coat Noodles with Sesame Oil (Secret Tip!): This is the key step! Transfer the drained noodles to a wide bowl. First, add the sesame oil. Here’s why this is important: Buckwheat noodles have a rough surface that absorbs flavors quickly. If you add soy sauce first, the noodles can become excessively salty. By coating the noodles with sesame oil initially, you create a barrier that allows the savory sesame oil flavor to penetrate evenly while moderating the saltiness of the soy sauce. This results in a richer, more balanced taste.
