Main Ingredients- 10 fresh perilla leaves
- 4 oyster mushrooms
- 15g dried shredded pollack (jinmi-chae)
- 1/4 onion
- 4cm green onion
- 1 clove garlic
Sweet and Sour Dressing- 1 tsp gochujang (Korean chili paste)
- 1 tsp gochugaru (Korean chili flakes)
- 1/2 tsp sugar
- 1/2 tsp salt
- 1 tsp vinegar
- 1/2 tsp soy sauce
- Sesame seeds, to taste
- 1 tsp corn syrup
- 1 tsp gochujang (Korean chili paste)
- 1 tsp gochugaru (Korean chili flakes)
- 1/2 tsp sugar
- 1/2 tsp salt
- 1 tsp vinegar
- 1/2 tsp soy sauce
- Sesame seeds, to taste
- 1 tsp corn syrup
Cooking Instructions
Step 1
First, bring a pot of water to a boil. Once boiling, add the cleaned oyster mushrooms and blanch for about 2-3 minutes until tender. This process helps to bring out the mushrooms’ natural aroma and improves their texture.

Cut the dried shredded pollack into 4cm lengths. Rinse the cut pollack lightly under running water, or gently wipe it with a damp cloth. This will make it softer and help it absorb the dressing better.

Finely mince the green onion and garlic for added fragrance. Thinly slice the onion into strips. Once the blanched oyster mushrooms have cooled slightly, tear them into bite-sized pieces by hand. This allows the dressing to penetrate the mushrooms for enhanced flavor.

Wash the perilla leaves thoroughly. Fold them in half, stack them, roll them up tightly, and then thinly slice them into shreds. This method preserves the perilla leaves’ fresh aroma and ensures they blend well with the other ingredients.

Now, let’s make the delicious dressing! In a bowl, combine the gochujang, gochugaru, sugar, salt, vinegar, corn syrup, and soy sauce. Mix them well. Add the minced green onion and garlic to enhance the fragrance, and your flavorful dressing is ready.

Add the torn oyster mushrooms and prepared dried shredded pollack to the dressing. Gently mix them together with your hands until well coated. Finally, add the sliced onions and toss lightly.
