Spicy & Sweet Squid and Pork Belly Stir-fry (Osam Bulgogi)
A Special Recipe for Appetizing Osam Bulgogi
A fantastic combination of fresh squid and savory pork belly! This Osam Bulgogi is a spicy and sweet dish that the whole family will love. Although squid prices have risen a bit, I made this with love for my dear son. The chewy squid and tender pork belly create a perfect partner for rice. After stir-frying in a spicy sauce, the leftover sauce mixed with rice is an absolute delicacy! Enjoy this hearty meal.
Main Ingredients- 2 medium squids
- 1 strip of pork belly (about 200g)
- 1 stalk of green onion (scallion)
- 1 medium onion
Seasoning Ingredients- 1 Tbsp sugar
- 1 Tbsp corn syrup (or oligodang)
- 3 Tbsp cooking wine (like Mirin)
- 3 Tbsp red pepper flakes (gochugaru)
- 2 Tbsp fish sauce (anchovy or sand lance)
- 1 Tbsp soy sauce
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1 Tbsp sesame oil
- 1 Tbsp sugar
- 1 Tbsp corn syrup (or oligodang)
- 3 Tbsp cooking wine (like Mirin)
- 3 Tbsp red pepper flakes (gochugaru)
- 2 Tbsp fish sauce (anchovy or sand lance)
- 1 Tbsp soy sauce
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, prepare the vegetables. Peel the onion and slice it into thin strips about 0.5cm thick. Wash the green onion and slice it diagonally or chop it finely, about 0.5cm thick, including the white and green parts.
Step 2
Now, let’s prepare the squid. Remove the insides and ink sac from the squid body. You can peel the skin or leave it on, depending on your preference. Cut the body in half lengthwise, then slice it into bite-sized pieces about 1 to 1.5cm wide. Clean and prepare the tentacles as well.
Step 3
Cut the pork belly into bite-sized pieces, about 3-4cm in length. If it’s a long strip, you can also cut it into individual pieces after cooking.
Step 4
It’s time to marinate in the delicious sauce! Place the prepared squid in a large bowl. Add all the seasoning ingredients: sugar, corn syrup, cooking wine, red pepper flakes, fish sauce, soy sauce, and minced garlic. Add the sliced onion and chopped green onion. Mix everything gently with your hands, ensuring the sauce evenly coats the squid and vegetables. Let it marinate for about 10 minutes.
Step 5
Heat a pan over medium heat. Add the pork belly pieces and cook until golden brown and slightly crispy on both sides. If there’s too much rendered pork fat, you can gently wipe some of it away with a paper towel for a cleaner dish.
Step 6
Once the pork belly is nicely browned, add the marinated squid and vegetables to the pan. Now, it’s crucial to stir-fry over high heat! As the squid cooks, it will release water. Stir-frying quickly over high heat prevents excessive water from accumulating and helps the sauce to meld beautifully with the ingredients, making it even more delicious.
Step 7
When the squid and pork belly are cooked through and the sauce has slightly thickened, turn off the heat. Finally, drizzle in the sesame oil and sprinkle generously with toasted sesame seeds. Give it a light mix. Serve this delicious Osam Bulgogi generously over warm rice or on its own. Enjoy your meal!
