Ingredients

  • Chicken tenderloin 172g

  • Pinch of salt (baby salt recommended)

First, thoroughly remove any tough sinew from the chicken tenderloin. Cut the chicken tenderloin in half, into pieces about 2-3 cm in size. Roughly chop the onion, carrot, and broccoli. The size doesn’t need to be too small, as they will all be ground together later.

The moisture from the chicken and vegetables is a crucial factor in determining the batter’s consistency. If there’s too much moisture, you’ll need more rice flour, which can affect the taste. Use kitchen towels to press out as much moisture as possible from the chicken tenderloin and chopped vegetables. Thoroughly removing the water is key to a tender texture.

Place the prepared chicken tenderloin and vegetables into a food processor (chopper). Process until there are no lumps and the mixture is finely ground. Stop and scrape down the sides occasionally to ensure even processing.

Add one fresh egg to the finely ground chicken and vegetable mixture. Now, it’s time to adjust the batter’s consistency. The batter should be thick enough that it doesn’t easily drip off a spoon, with a slight heaviness. Gradually add rice flour to achieve this consistency. I used 3 tablespoons of rice flour, but you can adjust the amount based on how the batter looks and feels.

If you’re seasoning for your baby, use a very small amount of baby-specific salt, rather than regular table salt. The sausages are delicious even without added salt due to their natural mildness. Adjust the salt amount according to your baby’s age and dietary habits.

Now it’s time to shape the batter. Lay out a piece of parchment paper. Place a portion of the batter onto the paper. Using your hands or the back of a spoon, press down the batter firmly to form a long sausage shape. It’s important to roll it tightly to avoid air pockets. Seal the edges well.

Place the shaped sausages in a steamer basket and steam over medium heat for about 15 minutes. You can check for doneness by inserting a skewer; if it comes out clean, they are cooked through. Remove them immediately after 15 minutes without letting them sit and steam further.

Once the sausages have cooled slightly and are no longer steaming hot, cut them into desired sizes. Cutting them into bite-sized pieces perfect for your baby is ideal. The finished Shrek Sausages can be served immediately, or cooled and stored in the refrigerator or freezer for future baby meals. It’s recommended to consume refrigerated sausages within 2-3 days and frozen ones within 2 weeks.
