Ingredients for Stir-Fried Potato Noodles

  • 300g Potatoes
  • 40g Carrot
  • 1 Cheongyang Pepper (a type of Korean chili pepper)

Seasoning for Stir-Fried Potato Noodles

  • 2 tsp Salt
  • 3 tsp Vinegar
  • 3 tsp Sugar
  • 1/2 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

First, peel the potatoes (300g) and the carrot (40g). Slice them into thin, uniform matchsticks, about 0.3 cm thick. Ensuring the thickness is consistent will help them cook evenly, resulting in a better texture. The carrot adds a nice color and a hint of sweetness.

Finely chop 1 Cheongyang pepper. If you prefer a spicier dish, you can add another pepper. Removing the seeds will also reduce the heat.

To prevent the potatoes from becoming mushy and to remove excess starch, rinse the sliced potatoes under cold running water once or twice. After rinsing, blanch them in boiling water for just 10 seconds. Be very careful not to overcook them, as they will become soft very quickly!

Immediately after blanching, drain the potatoes thoroughly in a colander. Draining them while they are still hot helps to prevent them from sticking together.

In a large bowl, combine the drained potato noodles, sliced carrot, and chopped Cheongyang pepper. Add 2 teaspoons of salt and 3 teaspoons of sugar. You can adjust the amount of sugar to your preference.

Next, add 3 teaspoons of vinegar for a refreshing tang. Mix everything gently with your hands, ensuring all the ingredients are well coated with the seasoning. Avoid mashing the potatoes as you mix.

Finally, transfer the seasoned potato noodles to a serving dish. Sprinkle 1/2 tablespoon of toasted sesame seeds over the top for a nutty aroma and flavor. Your simple, crispy, and refreshing stir-fried potato noodles are ready! They taste even better when chilled.
