Let’s get started on making this delicious aged kimchi stir-fry! First, prepare your aged kimchi. Kimchi that has been fermented for a long time will yield the best flavor.

Aged kimchi can sometimes have a strong or overly sour smell and taste. To ensure a clean flavor, rinse the kimchi thoroughly under running water to wash away any excess spicy paste or brine. If the kimchi is still very strong, don’t hesitate to rinse it multiple times. This step helps to retain a refreshing crispness and a balanced taste.
Step 3
After rinsing, squeeze out as much water as possible from the kimchi by hand. Excess water can dilute the seasoning, making the dish bland. Once drained, cut the kimchi into bite-sized pieces, about 3-4 cm in length. This size is easy to eat and allows the seasoning to be absorbed evenly.
