Main Ingredients- 1 bunch Water Parsley (approx. 340g)
- 1 Tbsp Sea Salt (for blanching)
- 2 Tbsp Perilla Oil
- 1/2 Tbsp Fine Salt (for seasoning)
Cooking Instructions
Step 1
Spring water parsley is wonderfully aromatic this season. Supermarkets often sell pre-cleaned bunches, so all you need to do is rinse it thoroughly under running water. Cut the rinsed water parsley into manageable lengths for blanching. Bring a pot of water to a boil and add 1 Tbsp of sea salt.
Step 2
When cooking with boiling water, it’s always best to add ingredients starting with the firmer parts. For water parsley, begin by immersing the stems into the boiling water first. This ensures even cooking and maintains a pleasant texture.
Step 3
Even though water parsley is naturally a vibrant green, it becomes even more strikingly green when introduced to hot water. The color is truly appetizing, isn’t it?
Step 4
Water parsley is a vegetable that can be eaten raw, so it doesn’t need to be blanched for long. Blanch it for just 20-30 seconds. Immediately after blanching, plunge the water parsley into cold water to rapidly cool it down. This step is crucial for preserving its crisp texture.
Step 5
Drain the blanched water parsley from the cold water using a colander. Gently press it with your hands to squeeze out any excess water. Properly squeezing out the water is important to prevent the salad from becoming watery and to ensure the seasoning adheres well.
Step 6
Once the water is squeezed out, cut the water parsley into bite-sized pieces. If they are too long, they can be difficult to eat, so cutting them into lengths of 3-4 cm is ideal. Now, let’s get ready to mix it with the seasoning.
Step 7
With water parsley being so flavorful due to its seasonal peak, it doesn’t require many seasonings. To enhance its natural aroma, we’ll use minimal seasoning. First, generously add 2 Tbsp of aromatic perilla oil. The nutty flavor of perilla oil pairs wonderfully with water parsley.
Step 8
Next, add 1/2 Tbsp of fine salt to season. Adjust the amount of salt according to the quantity of water parsley and your personal preference. Now, gently mix everything together with your hands. Be careful not to overmix, as this can make the water parsley mushy. A gentle toss is key.
Step 9
And there you have it! A fragrant and crisp water parsley salad made with minimal seasoning. This super simple vegetable side dish brings the essence of spring to your table.
