  • 1 pack Enoki Mushrooms
  • 7 slices Bacon
  • 2 Korean Cucumbers (Oi-Gochu)
  • 1/3 Carrot

First, rinse the enoki mushrooms and trim off the tough bottom part. Then, separate them into manageable portions. This will make them much easier to wrap with bacon.

Wash the carrot thoroughly and peel it if desired. Cut it into thin sticks, roughly the same thickness as the enoki mushroom bundles. Slicing them thinly is key, as overly thick pieces will take longer to cook.

Trim the stems off the Korean cucumbers and slice them in half lengthwise. Scoop out the seeds from each half. Then, cut them into long strips, similar in length to the enoki mushrooms. These will add a refreshing crunch to the dish.

Bacon slices are usually quite long, so cut each slice in half. This makes the skewers a more manageable size for eating and helps ensure even cooking.

Now it’s time to assemble the skewers. Lay a half-slice of bacon flat on your cutting board. Place a portion of enoki mushrooms, a few strips of carrot, and a few strips of Korean cucumber on top of the bacon. Carefully roll the bacon around the vegetables, ensuring it’s wrapped tightly to prevent it from falling apart. Gently press the end of the bacon to secure the roll.

Cook them slowly, turning occasionally, until the bacon is golden brown and crispy, and the enoki mushrooms have softened and released some of their moisture. This should take several minutes, allowing all sides to cook evenly.
