Crisp Cucumber and New Onion Salad
Super Easy! Refreshing Cucumber and New Onion Salad to Melt Away Fatigue!

On days when you feel tired and drained, a refreshing and sweet cucumber salad can help melt away your fatigue. Enjoy this delightful dish!
Main Ingredients- 2 mini cucumbers
- 1 new onion
Seasoning- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Oligodang (corn syrup)
- 2 Tbsp Maesil Extract (plum extract)
- 0.5 tsp Sugar
- 2 Tbsp 2x Concentrated Vinegar
- A pinch of toasted sesame seeds
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Oligodang (corn syrup)
- 2 Tbsp Maesil Extract (plum extract)
- 0.5 tsp Sugar
- 2 Tbsp 2x Concentrated Vinegar
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, wash the mini cucumbers thoroughly. Slice them in half lengthwise, then diagonally into about 0.5 cm thick pieces. Peel the new onion and slice it thinly into strips. Tip: I used fresh new onions, so I skipped the step of soaking them in water to remove the pungent flavor. If your onion is too strong, soaking it in cold water for about 10 minutes after slicing and then draining it well will make it milder.

Step 2
In a clean bowl, combine the Gochujang, Gochugaru, Oligodang, Maesil Extract, and sugar. Tip: It’s best to add the vinegar after the sugar has completely dissolved in the sauce. This helps the vinegar’s acidity distribute evenly and prevents a harsh texture in your mouth.

Step 3
Once the sugar is well dissolved, add the 2x concentrated vinegar and stir everything together until the seasoning sauce is well combined and ready. Tip: If you add about 1/2 Tbsp of minced garlic to this sauce, you’ll achieve a perfect ‘gochujang’ style sauce with a fantastic balance of sweet and sour flavors!

Step 4
Add the sliced cucumbers and onions to the prepared seasoning sauce. Tip: Instead of pouring all the sauce over the vegetables at once, it’s easier to control the seasoning by adding the sauce gradually and mixing. I recommend starting with a smaller amount and tasting as you go.

Step 5
Gently mix the vegetables and sauce together until they are well combined. Tip: I like to make extra sauce because it’s so delicious that I enjoy mixing it with rice! You can also make a generous amount of sauce and enjoy it as a flavorful side dish by mixing it with rice. Its refreshing sweet and sour taste will surely awaken your appetite.
