For those living alone, chicken porridge might seem a bit daunting to make. That’s why I’m here to share a super simple method using just your favorite cut of chicken – no need to buy a whole bird! This recipe is designed for ultimate convenience, perfect for a quick and nourishing meal.

Main Ingredients

  • 120g chicken thigh or breast
  • 2 instant rice packs (approx. 200g each)
  • 1/4 onion
  • 1/3 carrot
  • 7-8 stalks of chives
  • 2 tbsp chicken stock (or anchovy-fish stock or water if unavailable)
  • 1 tbsp cooking wine (like mirin)
  • Salt to taste

Cooking Instructions

Step 1

First, place 120g of chicken thigh (or breast) in a bowl. Add 1 tbsp of cooking wine and mix well. This step is crucial for removing any gamey odor from the chicken, ensuring a cleaner, more delicious porridge.

Prepare your vegetables. Finely dice the onion and carrot. Wash and finely chop about 7-8 stalks of chives. Dicing the vegetables small will help them blend seamlessly into the porridge for a pleasant texture.

Now, let’s cook the chicken. Pour 1 liter of water (or chicken broth) into a pot. Add the chicken that has been seasoned with cooking wine. Stir in 1 tbsp of minced garlic for added flavor. Bring to a boil over high heat and simmer for 10 minutes until the chicken is cooked through.

Once the chicken is cooked, carefully strain it from the broth and place it on a plate. Let it cool slightly, then shred the chicken into bite-sized pieces using your hands or a fork. Remove any bones or tough parts.

To the chicken broth, add the 2 instant rice packs. Use a ladle to break up the rice and stir it into the broth until well combined. Let it come to a gentle boil, allowing the rice to start breaking down.

As the porridge begins to bubble, add the prepared diced carrots, onions, and the shredded chicken. Continue to simmer over medium-low heat for another 5 minutes, allowing the vegetables and chicken to soften.

After 5 minutes, check the consistency of the porridge. Stir in 2 tbsp of chicken stock. If you don’t have chicken stock, you can use anchovy-fish stock or plain water. Taste and adjust seasoning with a pinch of salt if needed.

Once the porridge has reached your desired thick and creamy consistency, add the chopped chives. Simmer for just another minute to let the fresh aroma infuse without overcooking them. Serve hot in bowls. Your delicious homemade chicken porridge is ready!
