  • 1.5 ripe tomatoes
  • 1 piece of small broccoli (approx. 1/4 head)
  • A little cooking oil (for greasing the pan)

  • 4 pinches of fine salt (approx. 1/4 tsp)
  • A dash of black pepper (to taste)
  • 1 tsp minced garlic

To create a tender and delicious egg roll, we’ll divide the 6 eggs and cook them in two batches. This method ensures a thicker and moister result.

Crack the 6 eggs into a bowl and whisk them until smooth. Finely dice the tomatoes and mince the broccoli. Add the minced garlic, 4 pinches of salt, and a dash of pepper. Mix everything thoroughly until well combined. If the tomatoes release too much moisture, you can gently pat them dry with a paper towel to prevent the egg mixture from becoming too watery.

Heat a non-stick pan over medium heat and lightly grease it with cooking oil using a paper towel. Pour about 1/3 to 1/2 of the egg mixture into the pan, spreading it thinly to cover the bottom. Be careful not to overheat the pan, as the eggs will cook too quickly. Adjust the heat accordingly.

Cook over medium-low heat until the edges start to set but the surface is still slightly moist. Gently roll the cooked portion from one end towards the other, like making a sushi roll. Once rolled, push it to one side of the pan. Pour another portion of the egg mixture into the empty space, allowing it to slightly overlap with the rolled egg to help them stick together. Repeat this process 2-3 times until you reach your desired thickness for the egg roll.

After pouring and cooking the final layer of egg mixture, turn off the heat. Use the residual heat from the pan to ensure the egg roll cooks evenly. Gently press or roll the egg roll with a spatula to seal any openings and create a smooth, rounded shape.

Remove the egg roll from the pan and let it cool slightly. If you slice it while too hot, it might break apart. Once slightly warm or fully cooled, cut it into bite-sized pieces (about 1 to 1.5 cm thick). Enjoy your nutritious and flavorful tomato and egg roll with a side of warm rice!
