In a bowl, crack the 2 fresh eggs. Add a pinch of fine salt. Pour in 1/4 cup of fresh milk. Whisk everything together with a fork or whisk for about 30 seconds until the egg yolks and whites are well combined and the milk and salt are evenly distributed, creating a smooth custard mixture. Avoid over-whisking, which can create too much foam.

Prepare the scallions, the secret ingredient for a flavor boost. Wash the scallions thoroughly, pat them dry, and finely chop about 1 tablespoon’s worth. Using mainly the white parts will offer a milder flavor. Don’t add too much, as it might make the toast bitter.

Carefully dip the bread slices into the prepared egg mixture, ensuring they are fully coated. Let each side soak for about 30 seconds to absorb the custard evenly.
