  • 1 Anchovy & Kelp Broth Pack
  • 1/2 Large Korean Leek (Daepa)
  • 2 Tbsp Soy Sauce for Soup (Guk-ganjang)
  • 1/2 Tbsp Sugar
  • 2 Hard-boiled Eggs (Optional)

Begin by preparing your fish cakes. Cut the 500g of fish cakes into bite-sized pieces, about 2-3 cm wide and elongated. This shape is perfect for scooping up with the broth. Remember that the fish cakes will expand slightly as they cook, so avoid cutting them too small.

In a deep pot, pour in 700ml of water. Add the anchovy and kelp broth pack and half of a large Korean leek, sliced diagonally. Bring this to a boil over high heat for 10 minutes. This step is crucial for developing a deeply flavorful and clear broth.

After 10 minutes, carefully remove and discard the broth pack and the leek pieces from the pot. You should be left with a clean, aromatic broth. Now, gently add all the prepared fish cakes to the pot. Gently separate any pieces that might be stuck together.

To season the soup, add 2 tablespoons of soy sauce for soup (guk-ganjang) for that essential savory depth, and 1/2 tablespoon of sugar to balance the flavors. Let the soup simmer over medium heat for about 5 minutes, allowing the fish cakes to absorb the delicious broth.

Taste the broth and adjust with salt if needed, according to your preference. Finally, add the remaining sliced leek (using the green parts for color) and the 2 hard-boiled eggs to the pot.
