Soft and Sweet Braised Radish Greens
Don’t Think Side Dishes Are Difficult ★ Radish Greens
Gently steamed and stir-fried to bring out the radish’s natural sweetness! Dried shrimp are added for double the umami. This recipe, from ‘All Recipes on Earth’ and ‘Man-Gye Recipe’, is packed with flavor.
Ingredients- 400g daikon radish
- 2/3 Tbsp salt
- 1 Tbsp minced green onion
- 1/2 Tbsp minced garlic
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1/2 paper cup water (approx. 100ml)
- 2 Tbsp dried shrimp
Cooking Instructions
Step 1
First, wash the 400g of daikon radish thoroughly. Then, julienne it into relatively thick strips, about 0.5cm thick. Cutting it too thinly might cause it to fall apart later, so the thickness is important.
Step 2
Place the julienned radish in a bowl and add 2/3 Tbsp of salt. Mix well to coat. Let it sit for about 15 minutes. This process draws out moisture from the radish, seasons it evenly, and makes it much softer when stir-fried.
Step 3
Heat a pan with 1 Tbsp of sesame oil over medium heat. Add 1/2 Tbsp of minced garlic and stir-fry until fragrant, being careful not to burn it. Once the garlic aroma releases, lightly squeeze out the excess moisture from the salted radish strips and add them to the pan. Stir-fry together.
Step 4
Once the radish begins to soften slightly, add 2 Tbsp of dried shrimp and 1/2 paper cup (approx. 100ml) of water. Cover the pan and cook on low heat until the radish is very tender. After the radish is cooked through, stir in 1 Tbsp of minced green onion, 1 Tbsp of toasted sesame seeds, and finally, another 1 Tbsp of sesame oil. Mix everything well. Adjust with salt to taste if needed. Your delicious radish side dish is now complete!
