Essential Ingredients- 2 fresh egg yolks
- 1/6 tsp Dijon mustard (for flavor)
- 1/2 tsp salt
- 1 Tbsp lemon juice
- 1/2 paper cup (approx. 60ml) grapeseed oil
Cooking Instructions
Step 1
First, separate 2 fresh egg yolks into a bowl. Using a whisk or fork, gently beat the yolks until they are smooth and lump-free. Once the yolks are loosened, add 1/2 tsp of salt and 1/6 tsp of Dijon mustard for flavor, and mix lightly. It’s important to combine these ingredients well at this stage.
Step 2
Now it’s time to slowly incorporate the grapeseed oil, which will determine the creaminess of your mayonnaise. Get your immersion blender ready. Pour the 1/2 paper cup (about 60ml) of grapeseed oil very gradually, like a thin stream, into the bowl while continuously blending. At first, an emulsion might not form immediately, so don’t worry – the key is to add the oil very slowly. As you move the immersion blender up and down, you’ll notice it becoming thicker.
Step 3
After adding all the grapeseed oil and blending until the mayonnaise is smooth and thick, add 1 Tbsp of lemon juice for a touch of freshness. Blend once more until everything is perfectly combined, creating a smooth and rich homemade mayonnaise! Taste and adjust with a tiny bit more salt or lemon juice if needed, according to your preference.
Step 4
This homemade mayonnaise, made with care, can be stored in an airtight container in the refrigerator for about 5 days. Enjoy it fresh on salads, sandwiches, or use it as a sauce for various dishes to create healthy and delicious meals!
