  • 1kg clementines (about 10-12 fruits)

Seasoning & Extras

  • 500g granulated sugar (about 50% of the fruit’s weight)
  • 1 Tbsp lemon juice (optional, helps with setting and adds brightness)

Cooking Instructions

Step 1

Start with 1kg of fresh clementines. Wash them thoroughly, then peel and separate the flesh from the peel and any white pith. Remove as much of the white pith as possible, as it can impart a bitter taste. Place the clementine segments into a blender and process until smooth. A few small chunks are fine, but blend further if you prefer a smoother jam consistency.

Transfer the blended clementines and 500g of granulated sugar to a wide, heavy-bottomed pot. Stir to combine and begin cooking over medium-high heat. Once it starts to boil and foam, reduce the heat to low. Stir continuously with a spatula, scraping the bottom to prevent sticking. Cook until the jam reaches your desired consistency. In the final 1-2 minutes of cooking, stir in 1 tablespoon of lemon juice. The lemon juice helps the jam set and adds a lovely tanginess.

While the jam is simmering, it’s crucial to sterilize your glass jars. Wash clean jars and lids thoroughly. Submerge them in boiling water for about 5-10 minutes, or steam them in a steamer basket. Ensure the jars are completely dry before filling. Filling the hot jars with hot jam creates a vacuum seal, which is essential for preservation.

Carefully ladle the hot, cooked clementine jam into the sterilized glass jars, filling them to the brim. Wipe any excess jam from the rim of the jar to ensure a good seal. Securely fasten the lids. To help create a vacuum seal, turn the jars upside down onto a heatproof surface and let them cool completely. Once cooled, store the jam in the refrigerator and enjoy the vibrant taste of homemade clementine jam!
