For this week’s final dish, I’ve prepared a special omelette recipe for my beloved son. The rice is infused with a fragrant curry aroma from added curry powder, and it’s topped with a soft, fluffy egg blanket that kids will absolutely adore. It’s a simple yet elegant meal or snack that’s perfect for any occasion.

Fried Rice Ingredients

  • 2 bowls of warm cooked rice
  • 5 strips of kimbap-style ham
  • 1/2 onion
  • A little bit of kabocha squash (optional, can substitute with other vegetables)
  • A little bit of carrot

Omelette Ingredients

  • 4 fresh eggs
  • 1/2 cup water (or milk)
  • A pinch of salt
  • A pinch of black pepper

Cooking Instructions

Step 1

First, prepare the ingredients for the fried rice. Finely chop the carrot, onion, ham, and kabocha squash (if you don’t have kabocha, you can omit it or use other vegetables you like). It’s best to dice them as small as possible so children can eat them easily.

Heat a pan over medium heat and add the chopped vegetables and ham to stir-fry. Season with a pinch of salt and pepper. If you have butter, add a little bit. The butter will add a wonderful richness and make the fried rice much more fragrant.

Once the vegetables are slightly cooked, turn off the heat temporarily and add the warm rice. Use a spatula to mix the rice and vegetables thoroughly. Then, add 1 Tbsp of curry powder, 2 Tbsp of ketchup, and 1 Tbsp of oyster sauce. Mix everything well to ensure the curry flavor permeates the entire rice.

Turn the heat back on to medium and stir-fry the rice. Continue to cook for about 2-3 minutes until the rice grains are separated and the seasonings are well combined. Then, turn off the heat and let it cool slightly.

Let’s make the sauce to accompany the omelette. In a small pot, combine 3 Tbsp ketchup, 5 Tbsp tomato sauce, 1 Tbsp soy sauce, 1 Tbsp vinegar, and 5 Tbsp water. Mix well and bring to a simmer over medium heat. Cook until it thickens slightly, then turn off the heat. The sauce is ready.

Now it’s time to make the fluffy omelette. Crack 4 eggs into a bowl. Season with a pinch of salt and pepper. Add 1/2 cup of water and whisk well with a whisk. If you have milk at home, using milk instead of water will result in an even softer and richer omelette. (Tip for using milk: A ratio of about 2 Tbsp of milk per egg works well.)

Heat a non-stick pan over medium heat and add a generous amount of cooking oil or butter. Once the pan is hot, pour in half of the egg mixture. Using chopsticks or a silicone spatula, gently stir the egg from the edges towards the center as it begins to set, creating a scrambled effect. Be careful not to burn it, and eliminating air bubbles is key to a tender omelette.

Turn off the heat when the eggs are softly set and not fully cooked through. The residual heat will continue to cook them, resulting in a moist and tender omelette.

Place the prepared curry fried rice into a nice bowl or serving dish. Gently press the rice into the shape of the bowl; this will make it easier to shape later.

Finally, carefully place the lightly cooked, soft egg scramble over the fried rice, covering it like an omelette. Make sure to cover it beautifully to create the omelette shape. Drizzle the prepared sauce over the top and, if you have parsley flakes or Grana Padano cheese, sprinkle a little on top for an even more elegant presentation. Enjoy your delicious meal!
