Main Ingredients

  • 500g thinly sliced pork belly (dae-pa samgyeopsal)
  • 1/2 onion, cut into thick strips
  • 1/2 green onion, diagonally sliced
  • 2 Korean green chilies, diagonally sliced (optional, for extra spice)
  • 1 red chili, diagonally sliced (for color and mild heat)

Golden Ratio Marinade

  • 7 Tbsp soy sauce
  • 1 Tbsp sugar (adjust to taste)
  • 1 Tbsp minced garlic
  • 1 Tbsp sesame oil (for nutty aroma)
  • 1 Tbsp plum extract (to remove odor and add umami)
  • 1 Tbsp mirin or cooking wine (to tenderize meat)
  • 2 Tbsp corn syrup or oligosaccharide (for gloss and subtle sweetness)
  • Pinch of black pepper (freshly ground recommended)
  • Pinch of sesame seeds (for garnish)

Cooking Instructions

Prepare 500g of thinly sliced pork belly. Its thinness allows the marinade to penetrate easily and cooks quickly.

Make the marinade for your delicious bulgogi in advance. In a bowl, combine soy sauce, sugar, minced garlic, sesame oil, plum extract, mirin, corn syrup, and pepper. Stir well until the sugar dissolves. (While doing this, it’s convenient to chop the onion, green onion, green chilies, and red chili into bite-sized pieces.)

Place the marinated pork belly in a large bowl. Pour the prepared marinade over it and gently mix with your hands, ensuring the marinade coats every piece of meat. Let it marinate for at least 20 minutes in the refrigerator or at room temperature. Proper marination is key to a more flavorful dish.

Heat a frying pan over medium heat. Add the marinated pork belly first and stir-fry. Cook until the surface of the meat starts to turn golden brown. Be cautious of oil splattering during this step.
