  • 1/2 medium zucchini (approx. 200g)
  • 1 large egg
  • 1/2 red chili pepper (for garnish)
  • 2 Tbsp pancake mix (buchim garu)
  • 1/2 tsp salt (for salting)

First, wash the zucchini thoroughly under running water. Slice it into rounds about 0.3 to 0.5 cm thick. Sprinkle 1/2 tsp of salt evenly over the sliced zucchini and let it sit for about 10 minutes. You’ll see the zucchini soften and release moisture as it salts. Do not rinse the zucchini; instead, gently pat each slice dry with paper towels. This step is crucial to prevent the pancakes from becoming soggy and to ensure a nice chewy texture.

Dust the dried zucchini slices evenly with pancake mix on all sides. Aim for a thin coating. Next, crack one egg into a bowl and whisk it well to create an egg wash. Dip each flour-coated zucchini slice into the egg wash, ensuring both sides are fully coated.

Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Carefully place the egg-coated zucchini slices onto the hot pan, one by one, making sure they don’t overlap. Leave some space between each slice so they cook evenly and don’t stick together. Allow them to gently sizzle and brown before flipping.

While optional, the chili adds a subtle spicy aroma and helps balance the flavors.
