Ingredients

  • 10 kg Tangerines
  • Secret Ingredients (instead of sugar)
  • 1.5 cups Vinegar
  • 1.5 cups Soju (Korean rice wine)

Cooking Instructions

Step 1

First, carefully select fresh and flavorful tangerines. Set aside any bruised or overripe ones.

Step 2

For the fresh tangerines, place them in a bowl for washing. Add 1.5 cups of vinegar and 1.5 cups of soju, and let them soak for 10 minutes. (This step helps remove residual pesticides from the tangerine peel.)

Step 3

Rinse the soaked tangerines thoroughly under running water multiple times. After washing, place them in a colander to drain completely.

Step 4

Take the tangerines that were set aside earlier. Peel them and remove any seeds, preparing them for use. (This process helps reduce any bitterness in the preserve.)

Step 5

Once the tangerines are dry, remove the seeds and slice them thinly. Aim for a thickness of about 3-5mm, depending on the size of the tangerines. Since you’ll be using the peel, thorough washing is crucial.

Step 6

Prepare sterilized glass jars for your preserve. Layer the sliced tangerines and your chosen secret ingredients (or sugar) into the jars. A 1:1 ratio of tangerines to secret ingredients is recommended, but you can adjust this to your taste. Pour in the soju and vinegar, filling the jar so all ingredients are submerged.
