I tried making the currently popular folded kimbap! This square kimbap, with its abundant fillings and perfectly seasoned rice, offers a mouthful of joy and is surprisingly easy to prepare. Add a special touch to your ordinary days with this delightful kimbap recipe. Let’s get started!

Ingredients

  • 4 sheets of Gim (seaweed for kimbap)
  • 4 bowls of cooked rice (warm)
  • 8 slices of processed ham
  • 3 eggs
  • Pickled radish (danmuji), sized to fit the kimbap
  • 4 perilla leaves
  • 8 pieces of crab sticks (like surimi)
  • 4 slices of cheese
  • 1 Tbsp sesame oil
  • Pinch of salt
  • Pinch of sesame seeds (for added nuttiness)

Cooking Instructions

Step 1

Prepare your favorite fillings for the square kimbap! You can use kimchi, tuna mayo, stir-fried shredded dried squid, or anything else you prefer. Lightly pan-frying the ham will enhance its flavor. For the eggs, you can make a thin omelet and julienne it, or cut it into strips similar to the ham. If using crab sticks, you can shred them or lightly sauté them.

The rice is key to delicious kimbap! Season the warm rice with a pinch of salt, then mix in fragrant sesame oil and sesame seeds. If the rice is too moist, the kimbap might fall apart, so aim for a slightly firm, fluffy texture.

Gently mix the rice with a spatula, holding it vertically, to avoid mashing the grains. The goal is to have each grain of rice remain distinct and intact.

Cut the kimbap seaweed sheets in half horizontally, as shown in the picture. Cutting them this way makes it easier to form the square kimbap shape.

Lightly coat your palm with a small amount of sesame oil and spread it thinly over the inner side of the seaweed sheet. This adds a nice crispness and aroma.

Scoop a generous amount of the seasoned rice and spread it onto the prepared seaweed sheet. Don’t skimp on the rice, as it helps hold the fillings together; too little rice can make the fillings slide around.

Spread the rice thinly over about a quarter of the seaweed sheet. If you spread it too thick, it will be difficult to fold later. Ensure the rice is evenly distributed to the edges.

Now, arrange your prepared fillings neatly over the layer of rice. Placing perilla leaves first adds a lovely aroma, and the cheese will melt to help bind all the ingredients together.

After arranging the fillings, add a bit more rice on top to cover them. This prevents the fillings from spilling out and helps create a cleaner fold.

Time to fold! First, fold the right side of the seaweed over the fillings, covering about one-third of the roll. Press down firmly as you fold to ensure the fillings like ham and egg don’t escape.

Finally, fold the remaining left side over to complete the square shape. Tuck it in securely to form a neat square. Pressing firmly is crucial to prevent any rice from popping out.

Cutting square kimbap like regular kimbap can cause the fillings to separate or become messy. If you want a neat, layered appearance like a sandwich, wrap the square kimbap tightly in plastic wrap before slicing. This will help you achieve clean cuts.

Personally, I find it easiest and most enjoyable to eat them without cutting. Taking a bite reveals the abundance of fillings and rice, making it incredibly delicious.
