Main Ingredients

  • Fresh Napa Cabbage 400g
  • Soft Tofu 1 block
  • Small Dried Shrimp 1 handful (approx. 15-20g)
  • Dried Anchovies for broth 1 handful
  • Dried Kelp small pieces 4 sheets
  • Spicy Cheongyang Peppers 1-2
  • Aromatic Scallion 1/2 stalk

Seasoning and Broth

  • Rich Soybean Paste 1.5 Tbsp – 2 Tbsp (adjust to taste)
  • Fragrant Minced Garlic 1 tsp
  • Salt to season, a little

Cooking Instructions

First, pour 2-3 liters of water into a pot, add the dried anchovies and kelp, and boil vigorously over high heat for 10 minutes to create a flavorful broth. (Using store-bought broth can make this process even easier.)

Rinse the cabbage thoroughly, shake off excess water, and cut it into bite-sized pieces. The crisp texture of fresh cabbage will make the soup even richer.

Dice the tofu into small cubes, about 1.5-2 cm. Finely chop the green parts of the scallion. The aromatic flavor of the scallion will enhance the soup’s taste.

Add the handful of small dried shrimp to the well-boiled broth. Scoop in the soybean paste and dissolve it completely without lumps. You can adjust the amount of soybean paste according to your preference.

Add the chopped cabbage, tofu, and sliced scallions to the broth with dissolved soybean paste. If you like it spicy, thinly slice and add the Cheongyang peppers. Stir in 1 tsp of minced garlic and boil vigorously over high heat for 5-6 minutes until the ingredients are cooked.
