  • 20 Dried Shrimps
  • 3 Tbsp Pancake Mix (Buchim Garu)
  • 2 Eggs
  • Pinch of Salt
  • Pinch of Black Pepper
  • 5 Tbsp Cooking Oil

First, trim off both ends of the zucchini. Wash it thoroughly under running water and set it aside. Washing the zucchini well is the first step to ensuring a clean, delicious flavor without any unpleasant taste.

Slice the zucchini crosswise into pieces about 0.7 cm thick. Slicing them too thin might cause them to break apart easily, while slices too thick might take longer to cook through. Aim for a consistent, moderate thickness.

Using a teaspoon, gently scoop out a small portion from the center of each zucchini slice to create a small hollow. This indentation will be perfect for holding the dried shrimp when we fry them! Be careful not to scoop too deeply, as shown in the example picture.

Place the hollowed zucchini slices into a resealable plastic bag. Add the 3 tablespoons of pancake mix. Seal the bag, leaving some air inside to inflate it, and gently shake it. This method ensures the pancake mix coats each zucchini slice evenly and thinly. Shake gently to avoid clumping.

In a separate bowl, crack the 2 eggs and whisk them together. Season with a pinch of salt and a pinch of black pepper to create a flavorful egg wash. Lightly seasoning the egg wash will enhance the overall taste of the pancake.
