Main Ingredients

  • 1 handful of ripe kimchi (approx. 100g)
  • 5 Tbsp kimchi juice (measured with a rice spoon)
  • 100g somyeon (Korean thin wheat noodles, for 1 serving)
  • 1 Cheongyang chili pepper (optional, adjust spiciness)
  • 1-2 lettuce leaves
  • A little sesame oil
  • A little toasted sesame seeds

Golden Bibim Sauce

  • 1/2 Tbsp gochugaru (Korean chili flakes, measured with a rice spoon)
  • 1 Tbsp gochujang (Korean chili paste, measured with a rice spoon)
  • 1 Tbsp soy sauce (measured with a rice spoon)
  • 1 Tbsp maesilcheong (plum syrup, measured with a rice spoon)
  • 1 Tbsp oligodang (corn syrup or other liquid sweetener, measured with a rice spoon)
  • 2 Tbsp apple cider vinegar (measured with a rice spoon)
  • 1 Tbsp roasted sesame seeds (measured with a rice spoon)

Cooking Instructions

Step 1

First, let’s prepare the heart of your delicious Bibim Guksu: the sauce! In a bowl, combine gochugaru, gochujang, soy sauce, maesilcheong, oligodang, apple cider vinegar, and roasted sesame seeds. Mix them thoroughly until well combined. Finely chop the kimchi into small pieces. Wash the lettuce leaves, pat them dry, and then tear them into bite-sized pieces or thinly slice them. If using, mince the Cheongyang chili pepper after removing the seeds. (Leave the seeds in if you prefer a spicier kick.)

Add the chopped kimchi to the bowl with the prepared sauce. Pour about two-thirds of the sauce over the kimchi and mix well with your hands, gently massaging the seasoning into the kimchi. Then, add a drizzle of sesame oil and mix again to further enhance the aroma and flavor.

Now it’s time to cook the noodles. Bring a generous pot of water to a rolling boil. Carefully add the somyeon noodles, loosening them gently as you place them in the water to prevent sticking. Cook for about 4 minutes. (You can adjust the cooking time based on your preferred noodle texture.) While the noodles are cooking, prepare about 1 cup of cold water. We’ll use this to rinse the noodles, which helps achieve that wonderfully chewy texture.

Once the noodles are cooked, drain them thoroughly in a colander. Pour the prepared cold water over the noodles and rinse them briefly – this step is key to making them springy and firm. Drain the noodles again very well. Transfer the drained noodles to the bowl with the seasoned kimchi. Add the remaining sauce and toss everything together gently until the noodles are evenly coated with the delicious, spicy, and sweet mixture.

We’re almost there! Carefully transfer the well-mixed Bibim Guksu into your serving bowl. The vibrant red of the kimchi and sauce against the pale noodles looks incredibly appetizing, doesn’t it?
