  • Boneless chicken thighs 1 pack (approx. 300-400g)
  • 1/5 head of cabbage
  • 1 medium sweet potato
  • 1 handful of rice cakes (tteokbokki tteok, approx. 100g)
  • 1/2 stalk of green onion
  • 1 medium onion

Let’s make some delicious Dakgalbi that everyone in the family will enjoy! Following this recipe will allow you to enjoy a fantastic Dakgalbi right in your own home.

First, it’s time to make the Dakgalbi sauce. In a bowl, combine 2 Tbsp gochujang, 1 Tbsp gochugaru, 1 Tbsp soy sauce, 1 tsp minced garlic, 1 tsp sugar, and a pinch of black pepper. Mix them well. Now, coat the boneless chicken pieces evenly with this prepared sauce. Marinate for at least 20 minutes to allow the flavors to meld beautifully. (If you have more time, marinating in the refrigerator for over an hour will deepen the flavor even further.)

Now, let’s stir-fry the marinated chicken. Place the marinated chicken in a pan. Add the rice cakes (tteok), the peeled and cut sweet potato, and the shredded cabbage. Start stir-frying over high heat; this helps prevent the ingredients from sticking together and cooks them wonderfully. As the vegetables release their moisture, stir and mix everything together using a spatula, as if you’re dividing it.

When the Dakgalbi is almost cooked, add the sliced green onions and thinly sliced onion. Adding the onion at this stage enhances the sweetness, and the green onion adds a fragrant aroma, further elevating the flavor of the Dakgalbi.

Now, stir-fry everything together once more to ensure all ingredients are evenly cooked. The chicken should be fully cooked, the sweet potato tender, and the cabbage still slightly crisp. Stir-frying until you achieve this texture is ideal. Feel free to add perilla leaves (kkaennip) or enoki mushrooms if you like!
