Remember when sausage pan-fries, coated in egg and pan-fried, were a staple in packed lunches? While they might not be as common now, we still enjoy making them at home occasionally. Today, we’re adding a touch of flair by incorporating finely chopped vegetables from the fridge and sweet corn kernels into the egg batter for a delightful twist on this classic dish. The pop of corn adds an extra layer of flavor and texture!

Main Ingredients

  • 1/4 Onion, finely minced
  • 3 Tbsp Canned Corn, drained
  • 10 Perilla Leaves, finely chopped
  • 4 Eggs
  • 1/2 tsp Herb Salt
  • 160g Pink Sausage (or regular sausage), sliced into 0.5cm thick rounds

Cooking Instructions

Step 1

First, prepare the vegetables for the pan-fry. Finely mince 1/4 of an onion. Drain canned corn thoroughly to ensure it’s ready to add a delightful crunch. Wash and thoroughly dry 10 perilla leaves, then finely chop them. These will add freshness and aroma to your dish.

In a large bowl, combine the minced onion, drained corn, and chopped perilla leaves. Crack in 4 eggs and season with 1/2 teaspoon of herb salt for a balanced flavor. Whisk everything together thoroughly with chopsticks or a whisk until well combined, creating a smooth batter. Slice the sausage into thin rounds, about 0.5cm thick.

Heat a non-stick pan over medium-low heat and add a generous amount of cooking oil. Reduce the heat to the lowest setting. Using a tablespoon, scoop about half a spoonful of the egg batter and gently spread it into a small circle on the pan. Place one sliced sausage onto the wet batter. Continue this process, adding small portions of the vegetable-egg batter and topping with a slice of sausage, building up your pan-fries.

Once the bottom of the pan-fry starts to set and turn golden brown, carefully flip it over using a spatula. Gently press down on the pan-fry with the spatula to ensure the sausage and egg batter adhere well and maintain their shape. This pressing action helps to keep everything together as it cooks.

Continue to cook, flipping occasionally, until both sides are golden brown and the pan-fry is cooked through. Cooking over low heat is key to ensuring the inside is cooked without burning the outside. Your delicious vegetable and sausage pan-fries are ready to be enjoyed! They are best served warm.
