  • Dried anchovies (small size): A generous amount.
  • Whole garlic: 4 cloves, thinly sliced.
  • Green onion: A small amount, finely chopped.

Seasoning

  • Oyster sauce: Adjust to your taste.
  • Sesame oil: 1 teaspoon

Cooking Instructions

Step 1

First, prepare the garlic to add flavor to your fried rice. Peel the 4 whole garlic cloves and slice them thinly. Finely chop the green onion after washing it. The dried anchovies can be rinsed if you prefer, or used as they are. If you find them a bit bitter, you can briefly pour hot water over them in a sieve to remove any fishy taste.

Preheat your pan, then add a good amount of cooking oil. Add the sliced garlic and stir-fry it over medium-low heat, being careful not to burn it. The garlic should become golden brown and release a fragrant aroma, similar to deep-frying. This step is key for a wonderfully crispy and flavorful fried rice.

Once the garlic is nicely browned, add the chopped green onion and dried anchovies to the pan. Stir-fry them together for about 2-3 minutes until the aroma of the green onion and the savoriness of the anchovies meld beautifully. Be mindful of the heat to ensure the anchovies don’t become too tough.

Now, add one bowl of cooked rice to the pan and stir-fry to combine it with all the ingredients. Use your spatula to gently break up any clumps of rice. Finally, add 1 teaspoon of sesame oil and oyster sauce to your liking for extra flavor. Stir-fry quickly until everything is well incorporated. Your delicious garlic anchovy fried rice is now ready to be enjoyed! It’s best served warm.
