I’ve made these delicious pan-fried patties using cockle meat and sausages, which I had frozen for easy storage. This dish was a perfect side for a warm summer morning’s meal. They also make a fantastic snack to enjoy with drinks!

Ingredients

  • 1/2 cup thawed cockle meat
  • 2 frankfurter sausages
  • 2 large eggs
  • 3 Tbsp minced green onion (scallions)
  • 3 Tbsp minced onion
  • 2 Tbsp minced spicy green chili (like Cheongyang chili)
  • A little cooking oil for frying

Cooking Instructions

Step 1

Prepare all your ingredients before you start cooking. If using frozen cockles, thaw them completely in cool water and then squeeze out as much moisture as possible. For the frankfurter sausages, remove the casings if you prefer, and have them ready. Finely mince the green onion, onion, and spicy green chili. If you want a milder flavor, you can remove the seeds from the chili peppers.

Thinly slice the frankfurter sausages into approximately 0.5 cm thick rounds. Slicing them thinly will ensure they cook through evenly and quickly. Set the sliced sausages aside for now.

In a large mixing bowl, combine the squeezed-dry cockle meat, sliced sausages, minced green onion, minced onion, and minced chili. Crack the 2 fresh eggs into the bowl. Mix everything together thoroughly with chopsticks or a spatula until well combined, forming a batter. Ensure all the ingredients are evenly distributed.

Heat a frying pan over medium heat and add a little cooking oil. Drop spoonfuls of the batter (about 1 tablespoon each) into the hot pan, leaving some space between them. Avoid overcrowding the pan, as this will make them harder to cook evenly. You’ll notice the patties start to puff up slightly as one side turns golden brown.

Once the edges of the patties appear golden and cooked, carefully flip them over using a spatula. Cook the other side until it’s also golden brown and delicious, about 2-3 more minutes. Adjust the heat as needed to ensure the inside is cooked through while the outside is perfectly crisp.

Arrange the beautifully cooked cockle and sausage patties on a serving plate. They are best enjoyed warm. You can serve them with a side of soy-based dipping sauce or even ketchup for an extra flavor boost.
