Key Ingredients

  • 1 large pack Enoki mushrooms
  • 2 Tbsp minced green onions (scallions)

Flavor-Enhancing Seasoning

  • 2 slices Butter (approx. 20g)
  • 1.5 Tbsp Oyster sauce
  • Sesame seeds, a generous amount (to taste)

Cooking Instructions

Step 1

Prepare all your ingredients. Lightly rinse the enoki mushrooms under running water and trim the root ends. Have your minced green onions ready.

Step 1

Step 2

Keeping the enoki mushrooms in their packaging, slice off about 1-2 cm from the root end. This helps the mushrooms stay intact and makes them easier to handle. Rinse them lightly under cold running water and gently shake off excess moisture.

Step 2

Step 3

Heat a pan over medium-low heat and add the 2 slices of butter. Let the butter melt slowly, being careful not to let it burn. Gently swirling the pan can help it melt evenly.

Step 3

Step 4

Once the butter is fully melted, add the prepared enoki mushrooms directly into the pan. The mushrooms will absorb the buttery richness, adding a wonderful savory depth.

Step 4

Step 5

As you stir-fry the enoki mushrooms, they will begin to release their moisture. At this point, pour in 1.5 tablespoons of oyster sauce evenly over the mushrooms to season. The oyster sauce provides a deep, umami flavor without needing many other seasonings.

Step 5

Step 6

Finally, add the 2 tablespoons of minced green onions and stir-fry over high heat for about a minute. You want to quickly cook the green onions until fragrant, but avoid overcooking, which can make the dish watery. Finish with a generous sprinkle of sesame seeds for extra flavor and texture.
