Begin by preparing two pieces of semi-dried Gizzard Shad (Bakdae). Gently rinse the fish under cool running water to clean the surface, then thoroughly pat them dry with paper towels. Drying the fish well is crucial for achieving a crispy texture and preventing oil splatters during cooking. If the tail end of the Gizzard Shad is too large for your frying pan, trim it to fit. (Tip: My Gizzard Shad pieces were almost the same size as my pan, so I grilled them whole without trimming the tails. Adjust according to your pan size.)

Next, lightly coat your preheated frying pan with a bit of olive oil. (You can substitute with regular cooking oil if preferred.) Once the pan is sufficiently heated, carefully place the prepared semi-dried Gizzard Shad onto the surface. It’s best to start over medium heat rather than high heat.

Continue to grill the Gizzard Shad over medium heat, flipping it occasionally, until both sides are beautifully golden brown and crispy.
