  • Shiitake mushrooms 2 (stems removed, thinly sliced)
  • Yellow bell pepper 1/4 (thinly julienned)
  • Cucumber 1/4 (thinly sliced or julienned)
  • Onion 1/8 (thinly julienned)
  • Green or red chili pepper 1 (seeds removed, finely chopped – adjust for spice preference)

Sauce Ingredients

  • Minced garlic 1 Tbsp
  • Prepared mustard 1 Tbsp
  • Honey or corn syrup 1 Tbsp

Place the smoked duck in an air fryer and cook at 170°C (340°F) for 7 minutes until lightly browned. This process helps to render the excess fat, resulting in a more tender and less greasy duck.

Once cooked, gently press the smoked duck with a paper towel to absorb any remaining oil. Then, slice it into bite-sized pieces and arrange it attractively on a serving plate. This preparation ensures you enjoy the duck’s rich flavor without heaviness.

Prepare the vegetables: tear the oyster mushrooms, thinly slice the shiitake mushrooms, and julienne the yellow bell pepper, onion, and chili pepper. Heat a little olive oil in a pan over medium-high heat, add the minced garlic, and stir-fry until fragrant. Add the prepared vegetables and stir-fry quickly over high heat, aiming to keep them crisp-tender.

In a small bowl, combine 1 tablespoon of prepared mustard and 1 tablespoon of honey (or corn syrup) in a 1:1 ratio. Whisk thoroughly until smooth to create a well-balanced honey mustard sauce.

Once the noodles are cooked, immediately drain them and rinse thoroughly under cold running water. This rinsing process cools the noodles, making them firmer and chewier, and removes excess starch for a cleaner taste. Drain them completely.
