Potato and Chive Pancake Ingredients

  • 1 large potato (medium size)
  • 50 grams fresh chives
  • 1/2 cup pancake mix (approx. 60g)
  • 3 tablespoons water (approx. 45ml)
  • 1/4 onion (small size)
  • Pinch of salt (to taste)

Savory Dipping Sauce

  • 2 tablespoons soy sauce
  • 1 teaspoon vinegar

First, thoroughly wash the potato and peel it. Then, grate it finely using a grater. Once grated, press the shredded potato using a cheesecloth or fine sieve to extract the juice, and set aside the solid pulp. This pulp is what gives the pancake its wonderfully chewy texture!

Wash the fresh chives under running water and drain them well. Finely chop them into pieces about 1cm long. Chopping them not too long will ensure the pancakes look beautiful and are easy to eat.

Peel and wash the 1/4 onion, then slice it into very thin julienne strips. Thinly sliced onions will blend well with the potato pulp and chives, adding a delicious depth of flavor.

In a large bowl, combine the reserved potato pulp, the chopped chives, and the thinly sliced onions. Gently mix them together to ensure all the ingredients are evenly distributed.

To the potato juice you extracted earlier, add 1/2 cup of pancake mix and 3 tablespoons of water. Whisk until smooth and lump-free. The batter should have a slightly thick consistency – adjust with a little more water if needed.

Pour the potato juice batter into the bowl containing the mixed ingredients. Stir gently with a spatula or spoon until everything is well combined, creating the final pancake batter. You can add a pinch of salt at this stage to season, but if your pancake mix is already salted, you can omit this step.

Heat a non-stick pan over medium heat and add a generous amount of cooking oil. Spoon the pancake batter onto the hot pan, forming small, round, and flat pancakes.
