Here’s a delightful Teriyaki Vegetable Sandwich made with homemade black sesame bread, which I shared a recipe for recently. I find sandwiches to be such a convenient and satisfying meal these days, often opting for them instead of rice. Using bread baked at home makes this sandwich feel exceptionally healthy and wholesome! You don’t need any fancy ingredients; just grill the vegetables you have in your fridge, sauté them with a sweet and savory teriyaki sauce, and add cheese and tomato for a quick yet flavorful creation. This sandwich has a surprisingly addictive quality – whenever I have bread and leftover vegetables, I find myself making it again! It’s both hearty and irresistibly tasty. For 2 Sandwiches- 4 slices Sandwich bread
- 1/2 Zucchini
- 1/2 Onion
- 2 small Tomatoes
- 2 slices Cheese
- Mayonnaise, to taste
Teriyaki Sauce- 2 Tbsp Soy sauce
- 1 Tbsp Unrefined sugar
- 2 Tbsp Soy sauce
- 1 Tbsp Unrefined sugar
Cooking Instructions
Step 1
Prepare the bread and vegetables. I used my homemade black sesame bread, for which I previously shared a recipe (@6910090). Using freshly baked bread enhances the flavor!
Step 2
Slice the zucchini thinly, about 0.5cm thick. Slice the onion similarly. Cut the tomatoes into bite-sized pieces or slices suitable for the sandwich.
Step 3
In a small bowl, combine the soy sauce and unrefined sugar. Stir well until the sugar is completely dissolved to create the teriyaki sauce. The ratio is 1 part sugar to 2 parts soy sauce, but you can adjust it to your preference.
Step 4
Toast the 4 slices of sandwich bread in a pan over low heat without any oil until they are golden brown and slightly crisp. This adds a lovely texture.
Step 5
Heat a pan over medium heat with a little oil. Add the sliced zucchini and onion. Grill them, flipping occasionally, until they are nicely browned and tender. Once they are cooked, reduce the heat to low.
Step 6
Pour the prepared teriyaki sauce over the vegetables in the pan. Stir and cook until the sauce has thickened and coats the vegetables, with most of the liquid evaporated. Aim for a glaze consistency.
Step 7
Spread a thin layer of mayonnaise on one slice of the toasted bread. Generously pile the teriyaki-glazed vegetables on top. Make sure to pile them high but ensure they won’t slide out too easily.
Step 8
Place a slice of cheese over the vegetables, followed by the tomato slices or pieces. Top with the other slice of bread, mayo-side down. It’s best to add the cheese while the vegetables are still warm so it melts slightly, enhancing the flavor!
Step 9
Wrap the finished sandwich tightly with plastic wrap to secure it and hold all the delicious ingredients together. Now, enjoy your hearty and flavorful Teriyaki Vegetable Sandwich!
