Shrimp fried rice is a convenient and satisfying one-bowl meal, perfect for any occasion. If you have oyster sauce in your pantry, you can create a delicious fried rice with minimal effort. Even when using frozen shrimp, with a little culinary skill, you can elevate it into a sophisticated dish.   • 1 bowl of warm cooked rice
  • 1/4 carrot
  • About 7 large shrimp
  • 1/4 onion
  • 1 green chili pepper (optional)
  • 1 egg
  • 1/2 cup chopped green onions

Cooking Instructions

First, peel and devein the shrimp. If the shrimp are very large, cut them into bite-sized pieces for easier eating (leaving them larger can add a nice texture). Finely mince the onion, carrot, and green chili pepper. For presentation, set aside two or three shrimp to use as a garnish later – this makes the fried rice look even more appealing.

In a separate bowl, whisk the egg and scramble it in a lightly oiled pan. Set the scrambled egg aside. Add a generous amount of cooking oil to the pan and stir-fry the shrimp until they start to change color. Pour in the cooking wine (2 Tbsp) to eliminate any fishy odors. Add the minced onion and carrot, and stir-fry together until the carrots become translucent. Season with a pinch of salt. If you enjoy a spicy kick, add the minced green chili pepper at this stage.

In the same pan, add a little more cooking oil and stir-fry the chopped green onions until fragrant, creating a flavorful scallion oil. Once the aroma of the scallions is prominent, add the shrimp back to the pan and continue to stir-fry. When the scallion oil and shrimp are well combined, add the oyster sauce (1 Tbsp) for a deep, savory flavor. Now, add the scrambled egg and the warm cooked rice. Use a spatula to break up any clumps of rice and stir-fry until everything is evenly mixed and the grains are well-coated with the sauce. Finally, sprinkle in a pinch of black pepper to enhance the flavors and remove any remaining gamey notes. Garnish with sesame seeds for an extra nutty aroma. Your delicious shrimp fried rice is ready to enjoy!
