  • 1 sheet of roasted seaweed (cut into small pieces)
  • 1 Tbsp sesame seeds
  • 1/2 zucchini (diced small)
  • 1/4 onion (diced small)
  • A pinch of bell pepper (diced small, use various colors for visual appeal!)
  • 2 slices of bacon (blanched and diced small)
  • A little cooking oil (for greasing the pan)
  • A little tomato ketchup (for garnish)

In the warm brown rice, add the finely crumbled roasted seaweed and toasted sesame seeds. Gently mix with a spatula or spoon, being careful not to mash the rice grains. Ensuring the seaweed and sesame seeds are evenly distributed throughout the rice is key.

Blanch the bacon in boiling water to remove excess fat, then dice it into small pieces, about 5mm in size. Dice the zucchini, onion, and bell pepper into similarly small cubes (around 0.5cm). Uniformly sized vegetables will provide a pleasant texture when sautéed.

Lightly oil a pan and heat over medium-low heat. Add the diced bacon and cook until golden brown and it renders its fat. Once the bacon is partially cooked, add the diced onion and sauté until translucent. Then, add the zucchini and bell pepper and stir-fry everything together until the vegetables are slightly tender. Season lightly with salt and pepper to enhance the savory flavors of the vegetables.

Finally, add the sunflower seeds and stir-fry with the vegetables for about 1 minute to add a nutty flavor and texture. Be mindful of the heat to prevent the sunflower seeds from burning.

Coat a clean pan with a very thin layer of cooking oil. Spread the prepared brown rice evenly and thinly across the pan in a circular shape. Cook over low heat, allowing the bottom of the rice to become golden brown and crispy, forming a rice crust. Cook for about 5-7 minutes, watching carefully to prevent burning.

Once the rice has formed a golden-brown crust, generously sprinkle mozzarella cheese over the cooked rice. Cover the pan with a lid and cook over low heat for 2-3 minutes, or until the cheese is completely melted and gooey.
