First, prepare 200g of Galmaegisal. In a bowl, combine 1 teaspoon of garlic herb salt (specifically the one sold at Costco is recommended for its flavor) and a pinch of freshly ground black pepper. Add 1 teaspoon of cumin sauce to further enhance the savory notes and mask any potential pork odor. Mix these ingredients well with the pork. Cover the bowl with plastic wrap and let the meat marinate and age in the refrigerator for about one day. This marination process will tenderize the meat and deepen its flavor. When ready to cook, heat a non-stick pan over medium heat without adding any oil. Carefully place the marinated Galmaegisal onto the hot pan. Since this cut is relatively lean, keep an eye on the heat to prevent it from burning.
