- 1/2 Tbsp ssamjang (Korean fermented soybean paste)
- 1 tsp soy sauce (regular or light)
- 1 Tbsp perilla oil (sesame oil can be substituted)

Cooking Instructions
Step 1
Wash the fresh beet greens thoroughly under running water, making sure to remove any dirt or debris from both the leaves and stems. Trim any wilted or tough parts for an even better result.
Step 2
Fill a large pot with enough water to cover the beet greens and bring it to a rolling boil. Once boiling, add a pinch of salt. Carefully add the stems of the beet greens first and blanch for about 1 minute. Then, add the leaves and blanch for another 30 seconds to 1 minute. Be careful not to over-blanch, as they can become too soft!
Step 3
Quickly rinse the blanched beet greens under cold water to cool them down. This helps maintain their crisp texture and vibrant green color. Squeeze out as much water as possible, then chop them into bite-sized pieces (about 3-4 cm in length).

In a bowl, combine the squeezed beet greens (you should have about 1.5 cups) with all the prepared seasoning ingredients. Add minced garlic, ssamjang, soy sauce, perilla oil, ground sesame seeds, and minced green onion if using. Gently mix and toss with your hands until everything is well combined. Avoid overmixing to keep the greens tender.
