The past few days have been so hot, I’ve been wishing for some cool rain, and thankfully, it’s finally here! When it rains, what do we crave? Pancakes, of course! Today, I’ll show you how to make delicious, crispy crab stick and pepper pancakes without using any flour at all. They’re a fantastic rainy-day treat!
Ingredients- 4 imitation crab sticks
- 2 eggs
- 2 Korean green peppers (or other crisp green peppers)
- 1/4 onion
- 3 cloves garlic
- 2 Tbsp canned corn kernels
- Pinch of black pepper
- 2 pinches of salt
Cooking Instructions
Step 1
First, shred the imitation crab sticks lengthwise into thin strands. Finely julienne the onion, making the strands thin enough to match the crab sticks. Mince the garlic cloves into very thin slivers, similar in thickness to the crab sticks. For the green peppers, remove the seeds and julienne them as thinly as you possibly can. Thinly cut ingredients ensure a crispier pancake.
Step 2
In a large bowl, combine the shredded crab sticks, julienned onion, garlic, and peppers. Add the 2 tablespoons of canned corn kernels. Crack in the 2 eggs, sprinkle with a pinch of black pepper, and add the 2 pinches of salt. Mix everything together.
Step 3
Mix all the ingredients in the bowl thoroughly with a spoon or your hands until well combined. Ensuring all ingredients are evenly distributed is key here. Once mixed, your crab stick and pepper pancake batter is about 80% complete – it’s that simple!
Step 4
Heat a non-stick pan over medium heat and add a generous amount of olive oil. Spoon portions of the batter onto the hot pan to form small pancakes. Cook until golden brown and crispy on both sides. You’ll be amazed at how well they hold together and crisp up without any flour! Enjoy these delightful pancakes on a rainy day.
