Ingredients- 2 bags fresh oysters (approx. 300-400g)
- 4 slices daikon radish for broth (approx. 100-150g)
- 0.5 Tbsp salt (adjust to taste)
- 1/2 stalk green onion (scallion)
Cooking Instructions
Step 1
First, prepare the fresh oysters. Gently rinse them multiple times under cold running water while in a colander. Be careful not to break them apart. Continue rinsing until the water runs clear, removing any impurities. Drain the oysters well and set aside.
Step 2
Prepare the daikon radish by slicing it into four pieces. Thinly sliced radish will contribute to a clearer and more refreshing broth.
Step 3
In a pot, add about 4 cups (1 liter) of water and the sliced daikon radish. Bring to a boil over high heat. Once boiling, add the prepared oysters and 0.5 Tbsp of minced garlic (optional). Adding garlic will enhance the soup’s aroma and flavor.
Step 4
As the soup returns to a boil after adding the oysters, skim off any foam or impurities that rise to the surface. This step is crucial for achieving a clear and clean broth. Use a fine-mesh skimmer or a spoon to remove them carefully.
Step 5
Once the broth is clear, season it with salt (or soy sauce if preferred) to your taste. Start with 0.5 Tbsp and adjust as needed. Finally, add the diagonally sliced green onion and let it simmer briefly. Your delicious and revitalizing Oyster Soup is ready to be enjoyed. Serve hot for the ultimate winter comfort!
