After slicing, soak the scallions in cold water for about 10 minutes. This step helps to mellow out their sharp, pungent flavor, making them much more tender and enjoyable.

Drain the scallions that have been soaking in cold water using a colander. Gently squeeze out as much water as possible with your hands. This is crucial because excess water will dilute the dressing. Once the scallions are relatively dry, add the measured seasoning ingredients: 1 tsp soy sauce, 1 tsp fish sauce, 1 tsp sesame seeds, and 1 tsp sesame oil.
