Feeling peckish when you’re out, but it’s too awkward to just buy a bowl of rice? I thought about what else I could eat in that situation and came up with this idea. These are delightful snacks you can easily make at home when you crave something satisfying yet different. Enjoy the satisfying fried rice in a crispy coating, or try the chewy potato jeonbyeong rolled around flavorful rice.

Main Ingredients

  • 1 Egg
  • 2 Potatoes (medium-sized)
  • 1/2 Carrot
  • 1/2 Onion
  • 4 Tbsp Oyster Sauce

Batter Ingredients

  • 10 Tbsp Meatball Batter (or 5 Tbsp Frying Mix + 5 Tbsp Water)
  • 10 Tbsp Potato Starch
  • 10 Tbsp Pancake Mix

Cooking Instructions

First, let’s prepare the vegetables. Wash and peel the onion, carrot, and potatoes, then julienne them finely. For the meatball batter, mix the pancake mix and water in a 6:4 ratio. (If you don’t have meatball batter, you can substitute with 5 Tbsp pancake mix and 5 Tbsp water.) In a separate bowl, combine the potato starch and pancake mix in a 5:5 ratio. Gradually add water, a little at a time, to achieve a thick, slightly sticky consistency, roughly matching the total amount of dry ingredients.

Now, let’s make the fried rice. Heat a generous amount of cooking oil in a pan over medium heat. Add the julienned onion, carrot, and potato. Sauté until the vegetables become translucent and fragrant. Cooking the vegetables thoroughly will bring out their natural sweetness and aroma.

Once the vegetables are tender, add one bowl of cooked rice and 4 tablespoons of oyster sauce. Stir-fry everything together until the oyster sauce is evenly absorbed by the rice. Ensure each grain is coated for a deep, rich flavor. Continue stir-frying until the rice is slightly separated and fluffy.

For the rice ball fritters, spread the cooked fried rice onto a wide plate or tray. Let it cool slightly while shaping it. Press the rice firmly with your hands to compact it, which will help it hold its shape during frying. Form it into rice balls of your desired size and let them cool completely.

For the potato jeonbyeong rice rolls, spread the fried rice thinly and evenly onto a flat surface or tray where it can be shaped into a flat rectangle for rolling. This will make it easier to roll up later.

Now, let’s make the potato jeonbyeong. Pour the prepared potato starch and pancake mix batter thinly onto a heated, lightly oiled pan. Cook like a thin pancake, flipping once, until golden brown and slightly chewy on both sides. This forms the jeonbyeong.

Once the potato jeonbyeong are cooked, let them cool slightly. While they are cooling, prepare the fried rice that will be used for the rolls. Shape the cooled fried rice from step 4 into a form suitable for placing on the jeonbyeong.

Place a portion of the prepared fried rice onto a cooled potato jeonbyeong. Roll it up tightly, like making sushi. If the edges start to separate, lightly brush the seam with some of the potato starch batter to help seal it. Lightly pan-fry the seam to ensure it holds its shape securely.

Now for the rice ball fritters. Carefully remove the shaped rice balls from their molds or tray, ensuring they maintain their form.

Coat the shaped rice balls evenly with the prepared meatball batter (or frying batter). Make sure the batter adheres well to the surface of the rice balls.

It’s time to fry! Heat enough oil in a pan for deep-frying. Carefully place the battered rice balls into the hot oil. Fry over medium heat until golden brown and crispy on all sides, ensuring the inside is heated through.
