Main Ingredients

  • 1 serving Dried Noodles (Somen)
  • 1 Shiitake Mushroom (or other mushroom)
  • 1/5 Zucchini
  • 1/5 Carrot
  • 1 Egg

Broth Ingredients (Optional, use what you have)

  • Small piece of Radish
  • 1/4 Onion
  • 1/2 Green Onion stalk
  • 1 handful Dried Anchovies for broth
  • 1 piece Dried Seaweed (approx. 10×10 cm)

Cooking Instructions

Step 1

First, prepare the delicious broth, the heart of Janchi Guksu. In a pot, add plenty of water and all the broth ingredients you have on hand, such as radish, onion, green onion, shiitake mushroom, dried anchovies, and seaweed. (Tip: To reduce any fishiness and enhance umami, lightly toast dried anchovies or shrimp in a pan before using them.) Bring to a boil over high heat, then reduce to medium-low and simmer for at least 10 minutes to extract a rich broth.

While the broth is simmering, prepare the toppings. Thinly julienne the carrot and zucchini, and slice the shiitake mushroom into similar-sized pieces. Heat a lightly oiled pan and sauté the julienned carrot, zucchini, and mushroom until slightly tender. (Tip: Sautéing each vegetable separately helps maintain their vibrant colors and distinct flavors.) For the egg, make a thin omelet and slice it, or scramble it.

Remove all the solid ingredients (radish, onion, green onion, anchovies, seaweed) from the well-simmered broth, leaving only the clear liquid. Pour the clear broth back into the pot and bring it to a boil again. Once boiling, add the dried noodles and cook for about 3 minutes, stirring occasionally to prevent sticking. (Tip: Rinsing the noodles in cold water before cooking can help them stay separate.)

Drain the cooked noodles and place them in a serving bowl. Ladle the hot, clear broth over the noodles. Arrange the sautéed vegetables (carrots, zucchini, mushrooms) attractively on top. Season the broth with 0.5 tsp of coarse salt and 0.1 tsp of black pepper. (Tip: Adjust the seasoning to your preference with additional salt or soy sauce. A splash of anchovy sauce can also add extra flavor.)

Finally, slice the prepared egg omelet (or scrambled egg) and place it on top of the Janchi Guksu for a beautiful finish. This warm and delicious Janchi Guksu is now complete. Enjoy with kimchi or cubed radish for an even more delightful meal.
