Basic Ingredients

  • 120g unsalted butter
  • 120g egg whites
  • 100g granulated sugar
  • 20g honey
  • 2g salt
  • 1 tsp vanilla extract

In a saucepan, melt the 120g of unsalted butter over medium-low heat. Once it starts to smell toasty, reduce the heat further and carefully brown it until it reaches a nice amber or nutty brown color. Keep a close eye on it to prevent burning.

Once the desired brown color is achieved, remove the saucepan from the heat. Strain the browned butter through a fine-mesh sieve to separate the clear butter oil. Allow this butter oil to cool slightly to about 50-60°C (122-140°F).

In a clean bowl, combine the 120g of egg whites, 100g of granulated sugar, 20g of honey, 2g of salt, and 1 tsp of vanilla extract. Using a whisk, stir the mixture while keeping the whisk at the bottom of the bowl until the sugar is dissolved. Avoid whisking vigorously to prevent creating too much foam.

Add the 25g of minced garlic and 3 tsp of dried parsley to the bowl. Now, switch to a whisk held upright and gently stir to incorporate the ingredients and break down any large bubbles. The goal is to mix everything well without over-aerating.

Sift in the 50g of almond flour, 40g of cake flour, and 25g of yellow cheese powder. Using a spatula, gently fold the dry ingredients into the wet mixture until just combined and no dry streaks remain. Be careful not to overmix.

Gradually add the cooled brown butter oil in two to three additions, mixing gently after each addition until the batter is smooth and homogenous. Ensure the butter is fully incorporated without separating.

Cover the batter tightly with plastic wrap or transfer it to an airtight container. Refrigerate for at least 1 hour to let the dough rest and the flavors meld. This resting period is crucial for texture and taste development.

Once rested, remove the batter from the refrigerator and give it a gentle stir. Transfer the batter to a piping bag for easy and even filling of the molds.

Generously grease your financier molds with melted butter (not included in the recipe ingredients). Pipe the batter into each mold, filling them about 80-90% full. Overfilling can cause the financiers to overflow during baking.

Preheat your oven to 190°C (375°F), then reduce the temperature to 180°C (350°F). Bake for 20-25 minutes, or until the financiers are golden brown and cooked through.
