Shrimp and Fried Tofu Pouch Rice Stir-fry

Chewy on the outside, moist on the inside! This is a delightful fried tofu pouch filled with delicious shrimp fried rice. The burst of shrimp and the texture of vegetables are superb, and you can enjoy a wonderful meal with simple ingredients. It’s also perfect as a snack for kids or as a lunchbox item!

Ingredients

  • 15 fresh shrimp (peeled, deveined, and thoroughly cleaned)
  • 18 seasoned fried tofu pouches (easily found in supermarkets)
  • 2 bowls of freshly cooked rice
  • 1 large egg
  • 1/2 green bell pepper (finely diced)
  • 1/4 carrot (finely diced)
  • 1/2 onion (finely diced)
  • 3 pinches of salt
  • 1 Tbsp oyster sauce
  • A pinch of black pepper
  • 2 Tbsp cooking oil

Cooking Instructions

Step 1

Heat a large pan over medium-high heat and add 2 Tbsp of cooking oil. Add the prepared shrimp and stir-fry for about 1-2 minutes until they turn pink. Once the shrimp are cooked, remove them from the pan and set aside on a plate. Cooking the shrimp separately beforehand helps maintain their texture.

In the same pan used for the shrimp, add the diced carrots, onions, and green bell pepper. Stir-fry over medium heat for about 3-4 minutes, until the vegetables become translucent and tender. Sauté them sufficiently to bring out their natural sweetness and aroma.

Once the vegetables are cooked, push them to one side of the pan. Add a little more cooking oil to the empty side, crack the egg into it, and scramble it. Stir with chopsticks until cooked into small curds, then mix it with the vegetables.

Add a pinch of black pepper and 3 pinches of salt to the sautéed vegetables and scrambled egg. Mix well to season. This is an important step for seasoning the fried rice, so taste and adjust as needed.

Take out the pre-cooked shrimp and finely chop them into bite-sized pieces. Add the chopped shrimp back to the pan and stir-fry with the vegetables and egg for about 1 more minute. Mix well to allow the shrimp’s flavor to infuse into the entire fried rice.

Add the 2 bowls of warm rice and 1 Tbsp of oyster sauce. Gently stir and mix with a spatula, being careful not to mash the rice grains. Stir-fry for about 2-3 minutes until each grain of rice is coated with the sauce.

Your delicious shrimp fried rice is ready! It’s wonderful to eat as is, but if you want to enjoy it a bit more specially, follow the next steps. Filling it into fried tofu pouches makes for an even more impressive dish.

Gently open one side of the seasoned fried tofu pouch to create a pocket. Carefully spoon the prepared shrimp fried rice into the pouch. Fill it nicely so the rice is packed inside the tofu. It’s complete! This is a perfect dish for special occasions or home parties.
