How to Make Delicious Tuna, Tofu, and Kimchi Stew
I’d been craving a hearty bowl of kimchi stew, so I looked up various recipes and decided to try making my own version with tuna and tofu. This stew is simple yet incredibly flavorful, making it the perfect partner for a bowl of rice. How about a warm and satisfying meal with this kimchi stew tonight?
Main Ingredients- 1/2 head of well-fermented kimchi (chopped into bite-sized pieces)
- 1 can of tuna (drained)
- 1 block of firm tofu (cut into cubes)
Stew Broth & Seasoning- 3 Tbsp kimchi brine (optional, if you have it)
- 1 Tbsp soy sauce (regular or seasoned)
- 1 Tbsp red pepper powder (adjust to your spice preference)
- 1/2 Tbsp sugar (helps balance the kimchi’s sourness)
- 3 Tbsp cooking oil
- Water (enough to generously cover the kimchi)
- 3 Tbsp kimchi brine (optional, if you have it)
- 1 Tbsp soy sauce (regular or seasoned)
- 1 Tbsp red pepper powder (adjust to your spice preference)
- 1/2 Tbsp sugar (helps balance the kimchi’s sourness)
- 3 Tbsp cooking oil
- Water (enough to generously cover the kimchi)
Cooking Instructions
Step 1
First, heat 3 tablespoons of cooking oil in a pot over medium-low heat. Add the chopped kimchi and 1/2 tablespoon of sugar. Stir-fry for about 5 minutes. Sautéing the kimchi this way softens it and deepens its flavor, adding a wonderful depth to the stew.
Step 2
Once the kimchi is well sautéed, add enough water to generously cover the kimchi. Stir in 3 tablespoons of kimchi brine for extra flavor. If you don’t have kimchi brine, you can skip this step. Add the entire drained can of tuna. Bring the stew to a boil over high heat.
Step 3
When the stew begins to boil vigorously, reduce the heat to medium, cover the pot, and simmer for another 5 minutes to allow the kimchi to become tender. Then, uncover the pot and season with 1 tablespoon of soy sauce and 1 tablespoon of red pepper powder. Finally, add the cubed tofu. Gently stir to avoid breaking the tofu and simmer just until the tofu is cooked through. Your delicious Tuna, Tofu, and Kimchi Stew is now ready to be enjoyed!
