First, let’s make the egg bread batter. In a bowl, combine 200g of hotcake mix, 130g of water, and 1 egg. Mix thoroughly with a whisk or spatula until you have a smooth batter with no lumps. The consistency should not be too thin or too thick.

Prepare your paper cups. You can also use measuring cups or regular mugs. Fill each paper cup with the prepared hotcake batter, about 1/3 of the way full. Be careful not to overfill, as it might overflow during baking.

Now it’s time to add the star ingredients: the egg and cheese. Carefully crack 1 egg onto the batter in each cup, keeping the yolk intact. Then, generously sprinkle shredded cheese over the egg, followed by a piece of cheddar cheese torn into smaller pieces for extra flavor. If you are using a microwave, it’s crucial to poke the egg yolk with a fork or toothpick before cooking. This prevents the egg from exploding during microwaving. If you are using an oven, you don’t need to poke the yolk.

Add a pinch of salt over the egg for balanced seasoning. Finally, sprinkle some dried parsley flakes for a nice visual appeal and a fragrant touch. A little black pepper can also be added for extra flavor if desired.

If using a microwave, cook for about 3-4 minutes, adjusting the time based on your microwave’s power. You can check if it’s done by inserting a skewer; it should come out clean.
