Potato braising might seem easy, but it’s common for the potatoes to break apart when you stir them to ensure even cooking! Don’t worry, though. If you add enough water and resist the urge to stir while the potatoes cook, you’ll achieve beautifully braised potatoes. And the best part? You add all the seasonings at once, making it incredibly simple. Since the Korean green peppers (gwari-gochu) are fresh today, I decided to make a braised dish with them alongside the potatoes for an even richer flavor. This is a fantastic side dish for rice!

Main Ingredients

  • Potatoes (medium-sized, about 7-8 pieces) 800g
  • Korean Green Peppers (Gwari-gochu) 20 pieces

Braising Sauce

  • Water 2 cups (approx. 400ml)
  • Soy Sauce 4 Tbsp (approx. 60ml)
  • Sugar 2 Tbsp (approx. 30g)
  • Cooking Oil 2 Tbsp (approx. 30ml)

Cooking Instructions

Step 1

First, wash the potatoes thoroughly, peel them, and cut them into bite-sized pieces, about 2-3 cm. Rinse the cut potatoes in cold water to remove excess starch; this will result in a cleaner and tastier braised dish. Wash the Korean green peppers under running water, remove their stems, and cut them in half. Cutting them too small might cause them to break apart while cooking, so aim for a suitable size.

Now, place the prepared potatoes in a pot. Add 2 cups of water, 4 tablespoons of soy sauce, 2 tablespoons of sugar, and 2 tablespoons of cooking oil in sequence. Adding all the ingredients at once is the key to this recipe! Bring it to a boil over high heat, then reduce to medium-low heat and simmer until the potatoes are cooked.

Once the liquid has reduced by about half, gently add the prepared Korean green peppers. It’s crucial not to stir too much with chopsticks or a spatula at this stage to prevent the potatoes from breaking. After adding the peppers, cover the pot and continue to simmer over medium-low heat for about 5 minutes, just until the peppers are slightly softened.

Don’t worry if the green peppers still look slightly undercooked! Turn off the heat and let it steam with the lid on for about 5 minutes. The residual heat will gently cook the peppers and allow the delicious flavors from the potatoes to meld. This braised dish of potatoes and green peppers, with its sweet and savory taste, pairs perfectly with rice and makes an excellent side dish that disappears quickly! Enjoy your meal!
